Agua is a lot produced by 16 coffee farmers in Palestina, Huila, at altitudes of 1,650m–2,000m, growing Castillo and Colombia varieties.Their artisanal process minimizes water use: hand-harvesting, depulping without water, fermentation for 30–36 hours, and limited washing, followed by sun-drying.
